1To prepare the dough, combine the 00 flour, 50g of Granulated sugar (for dough), and 5g of Lemon zest (for dough) in a large bowl. Make a well in the center.
2Add the Eggs, Extra-virgin olive oil, and White wine into the well. Gradually incorporate the dry ingredients into the wet, mixing until a shaggy dough forms.
3Turn the dough out onto a lightly floured surface and knead for about 10-15 minutes, or until smooth and elastic. Wrap the dough in plastic wrap and let it rest at room temperature for at least 30 minutes.
