1Cut the chicken into approximately 4-5 cm pieces.
2Heat cooking oil in a wok or large pot over medium-high heat. Add the chicken pieces and sear until golden brown on all sides. Remove the chicken and set aside, leaving rendered fat in the wok.
3Add the sliced ginger and smashed garlic to the wok and stir-fry until fragrant, about 1 minute.
