1In a large bowl, whisk together the All-purpose flour, Mung bean flour, 300g of Water, and Salt until a smooth, lump-free batter is formed. Let the batter rest for 15 minutes.
2In a separate small bowl, combine the Sweet bean paste, Hoisin sauce, Chili oil, Light soy sauce, and the remaining 15g of Water. Stir well to create the Jianbing sauce.
3Finely chop the Scallions and Cilantro. Dice the Pickled mustard greens.
