1Soak the Adzuki beans in ample water overnight, for at least 12 hours.
2Drain the soaked Adzuki beans. Place the Adzuki beans in a large pot with 1000g Water. Bring to a boil over high heat, then reduce heat and simmer for 5 minutes. Drain the Adzuki beans and discard the water.
3Return the Adzuki beans to the clean pot with another 1000g fresh water. Bring to a boil, then reduce heat to low and simmer gently for 60-90 minutes, or until the Adzuki beans are tender but still hold their shape. Do not let them burst.
