1Carefully clean the fresh squid: separate the body from the head and tentacles. Remove internal organs, including the clear cartilage (pen) and the beak from the tentacles. Reserve the ink sacs intact. Thoroughly rinse the squid body and tentacles under cold water.
2Gently extract the squid ink from the reserved sacs into a small bowl. If the squid's natural ink is insufficient, supplement with additional squid ink to reach 10 grams.
3Pat the cleaned squid body dry with a paper towel. Slice the squid body into thin strips, approximately 3-4 mm wide and 3-4 cm long.
