1Pat the Merluzzo fillets dry and cut them into 4-5 cm pieces. Season lightly with Sea salt and Black pepper.
2In a large, heavy-bottomed pot or Dutch oven, heat the Extra-virgin olive oil over medium heat.
3Add the Red onion and sauté gently for 5-7 minutes until softened and translucent, taking care not to brown it.
