1Place 500 grams chicken breast, 100 grams white onion, 10 grams garlic clove, 1 gram bay leaf, and 5 grams salt in a large pot. Cover the chicken breast completely with water and bring to a simmer over medium heat. Cook for 20-25 minutes, or until the chicken breast is thoroughly cooked.
2Remove the cooked chicken breast from the broth and let it cool slightly. Once cool enough to handle, shred the chicken breast using two forks.
3To prepare the salsa roja, toast 5 grams chile de arbol in a dry comal or skillet over medium-low heat for 30 seconds to 1 minute, being careful not to burn them. They should become fragrant.
