1In a large bowl, combine Maida and Salt. Add 50 grams of Ghee and mix well until crumbly. Gradually add Water and knead to form a firm, smooth dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
2While the dough rests, prepare the sugar syrup. In a heavy-bottomed pan, combine Granulated sugar with 200 grams of Water. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Continue to boil until the syrup reaches a one-string consistency (when a drop of syrup is pressed between your thumb and forefinger, a single thread forms). Remove from heat and stir in Cardamom powder. Keep the syrup warm.
3Divide the rested dough into 6-8 equal portions. Take one portion and roll it out into a very thin, large circle (like a roti) using a rolling pin.
