1Remove the hard outer shell and fibrous strings from the tamarind pods. Place the peeled tamarind in a large heatproof bowl.
2Heat 500 grams of water until very hot but not boiling. Pour the hot water over the peeled tamarind and let it soak for at least 30 minutes, or until the tamarind is soft.
3Once the tamarind has softened, use your hands to gently mash and separate the pulp from the seeds. Continue to work the tamarind until all the pulp has been released into the water.
