1Rehydrate Dried Shiitake mushrooms in warm water for at least 30 minutes. Once soft, squeeze out excess water, remove stems, and slice the caps. Reserve the mushroom soaking liquid.
2Slice Fresh Shiitake mushrooms and King Oyster mushrooms. Roughly chop Bok Choy. Thinly slice Ginger and Garlic. Chop Scallions, separating white and green parts.
3Heat Cooking oil in a wok or large pot over medium-high heat. Add the white parts of Scallions, sliced Ginger, and sliced Garlic. Stir-fry until fragrant, about 1 minute.
