1In a large bowl, dissolve 15 grams of granulated sugar and 20 grams of fresh yeast in 300 grams of warm water. Let it sit for 5-10 minutes until foamy.
2Add 500 grams of wheat flour, 10 grams of salt, and 30 grams of olive oil to the yeast mixture. Mix until a shaggy dough forms, then turn it out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
3Lightly grease a clean bowl with a small amount of olive oil, place the dough in it, cover with a clean cloth, and let it rise in a warm place for 60-90 minutes, or until doubled in size.
