1Rinse the Azuki beans thoroughly under cold water. Place the rinsed Azuki beans in a large pot and add 600g of Water for soaking azuki. Let them soak for at least 4 hours, or preferably overnight.
2Drain the soaked Azuki beans. Place the Azuki beans back into the pot, add 1000g of Water for boiling azuki, and bring to a boil over high heat. Once boiling, reduce heat to medium-low and simmer for 5 minutes. Drain the Azuki beans again, discarding the water. This step removes astringency.
3Return the Azuki beans to the pot. Add another 1000g of Water for boiling azuki, ensuring the Azuki beans are fully submerged. Bring to a boil, then reduce heat to low, cover, and simmer for 60-90 minutes, or until the Azuki beans are very tender and easily crushed between your fingers. Add more hot Water for boiling azuki if needed to keep the Azuki beans submerged during simmering.
