1Peel the sweet potato and cut it into 2 cm thick rounds. Steam the sweet potato until very soft, about 15-20 minutes. Alternatively, boil until soft.
2While the sweet potato is still hot, pass it through a fine-mesh sieve or mash it thoroughly with a fork or potato masher until completely smooth. Set aside.
3In a medium saucepan, combine the kanten powder and water. Whisk well to dissolve the kanten powder, then bring the mixture to a boil over medium heat, stirring constantly.
