1Rinse the dried apricots thoroughly under running water. Place the rinsed dried apricots in a bowl, add 500 grams of water, and let them soak overnight or for at least 8 hours until plump.
2Drain the soaked dried apricots, reserving the soaking water. Carefully slit each apricot and remove the pits. Keep the pits aside.
3Place the pitted dried apricots in a heavy-bottomed pan with 250 grams of fresh water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the apricots are very soft and tender.
