1Begin by preparing the broth. Place the beef short rib, chicken leg, onion, carrot, celery, black peppercorns, and salt into a large pot. Cover with approximately 4 liters of cold water.
2Bring the broth to a boil over medium-high heat. Once boiling, reduce heat to low and carefully skim any foam that rises to the surface.
3Simmer the broth gently for at least 3-4 hours, or until the meat is very tender and the broth is rich in flavor. Strain the broth through a fine-mesh sieve, discarding the solids. Keep the broth warm.
