1Cut the beef shank into large chunks, approximately 5-6 cm in size.
2In a large pot, add the beef shank and 2000g water. Bring to a boil over high heat, skimming off any foam that rises to the surface. Continue to boil for 5 minutes to thoroughly blanch the beef shank.
3Drain the blanched beef shank and rinse thoroughly under cold running water to remove any impurities. Set aside.
