1Wash the Japanese cucumber thoroughly. Slice the Japanese cucumber into 1 cm thick rounds or cut into spears, as preferred. Arrange the sliced Japanese cucumber on a serving plate.
2In a small bowl, combine the Awase miso, mirin, and sake. Whisk the ingredients together until a smooth and uniform miso paste forms.
3Spoon the prepared miso paste onto the side of the plate with the Japanese cucumber, or transfer the miso paste to a small dipping bowl.
