1Clean the whole chicken thoroughly. Chop the whole chicken into large pieces. Blanch the chicken pieces in boiling water for 2-3 minutes to remove impurities. Drain and rinse the chicken pieces well under cold water.
2Gently brush any dirt off the dried San qi root. If using a whole root, slice it into thin pieces.
3Place the blanched chicken pieces, sliced San qi root, and sliced ginger into a large ceramic or glass stewing pot.
