1Place the dried tamarind in a large bowl. Pour 500 grams of water over the dried tamarind and let it soak for at least 8 hours or overnight.
2After soaking, transfer the dried tamarind and its soaking water to a large pot. Add the remaining 1500 grams of water, cinnamon stick, cloves, and peeled and sliced fresh ginger to the pot.
3Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 45 minutes, stirring occasionally, until the dried tamarind is very soft.
