1Rinse the short-grain rice thoroughly and soak it in cold water for at least 2 hours, or preferably overnight. Drain well before use.
2Gently rinse the black sesame seeds to remove any impurities. Drain them well.
3Lightly toast the rinsed black sesame seeds in a dry pan over medium-low heat for 3-5 minutes until fragrant, being careful not to burn them. Let them cool completely.
