1Prepare the filling by combining the grated Parmigiano-Reggiano, Pecorino Romano, minced Garlic (2 cloves), and chopped Fresh parsley in a small bowl. Season with Black pepper.
2Lay out the slices of Beef sirloin on a clean surface. On each slice, place a thin slice of Pancetta. Spoon a portion of the prepared filling onto the Pancetta.
3Tightly roll each Beef sirloin slice into a compact cylinder. Secure each beef roll with kitchen twine or a few wooden toothpicks to prevent it from unrolling during cooking.
