1Rinse chicken bones and pork bones thoroughly under cold water. Blanch chicken bones and pork bones in boiling water for 5 minutes, then drain and rinse again to remove impurities.
2In a large stockpot, combine the blanched chicken bones, pork bones, sliced ginger, and large sections of scallion. Add 3 liters of water.
3Bring the stock to a boil, then reduce heat to a simmer. Skim off any foam that rises to the surface.
