1Place dried shrimp in a bowl, cover with hot water, and let rehydrate for 20 minutes. Drain, reserving 50g of the soaking liquid. Roughly chop the rehydrated dried shrimp.
2Finely mince garlic and ginger. Cut scallions into 5cm lengths, separating white and green parts. Cut Chinese chives into 4cm lengths.
3Bring a large pot of water to a boil. Add fresh egg noodles and cook according to package instructions until al dente, about 2-3 minutes. Drain well and set aside.
