1Wash and prepare all fruits. Peel, core, and cut the Pears and Green apples into uniform 2-3 cm pieces. Halve the Fresh figs. Halve and pit the Fresh apricots. Pit the Fresh cherries. Peel and segment the Mandarins.
2In a large non-reactive bowl, combine all the prepared Pears, Green apples, Fresh figs, Fresh apricots, Fresh cherries, and Mandarins with 500 grams of the Granulated sugar. Stir gently to coat, then cover and let macerate at room temperature for 24 hours to draw out natural juices.
