Prepare the aromatics: Finely julienne the Ginger. Thinly slice the Scallions, separating the white parts from the green parts.

Cook the Fresh egg noodles: Bring a large pot of water to a rolling boil. Add the Fresh egg noodles and cook according to package instructions until al dente. Drain thoroughly and set aside.

Prepare the sauce: In a small bowl, combine the Light soy sauce, Dark soy sauce, Oyster sauce, Granulated sugar, and White pepper. Stir until the Granulated sugar is dissolved.
