1Rinse the Chicken drumsticks and thighs thoroughly under cold water. Place them in a large pot, cover with fresh cold water, and bring to a rolling boil. Boil for 5 minutes, then drain the chicken and rinse off any scum under cold water. This blanching step removes impurities.
2While the chicken is blanching, gently rinse the Dried Goji berries, Dried Red Dates, Dried Dang Gui, Dried Huai Shan, and Dried Yu Zhu under cold water to remove any dust. Set aside.
3Return the blanched Chicken drumsticks and thighs to the clean pot. Add the rinsed Dried Goji berries, Dried Red Dates, Dried Dang Gui, Dried Huai Shan, Dried Yu Zhu, Fresh Ginger slices, and Scallions.
