1Clean the Prawns by rinsing them under cold water. Trim the antennae and legs if using head-on prawns. Carefully devein each Prawn by making a shallow incision along the back and removing the dark intestinal tract. Pat the cleaned Prawns dry with paper towels. Season the Prawns with 3 grams of Salt and 1 gram of White pepper.
2Peel and finely mince the 100 grams of Garlic. Peel and slice the 30 grams of Ginger into thin rounds. Slice the 50 grams of Scallions into 5 cm segments, separating the white and green parts.
3Heat a wok over high heat until smoking. Add 20 grams of Vegetable oil. Once the Vegetable oil shimmers, add the seasoned Prawns in a single layer and sear for 30 seconds on each side until they turn pink and slightly curled. Remove the Prawns from the wok and set aside.
