1Rinse the Zhacai thoroughly under cold running water to remove excess salt, then squeeze out as much water as possible. Slice the Zhacai into thin strips.
2Mince the Garlic and Ginger finely. Slice the Dried chili into small rounds.
3Heat a wok over high heat until smoking. Add the Peanut oil and swirl to coat the wok surface.
