1Rinse the Japanese short-grain rice thoroughly under cold running water until the water runs clear, then soak it in 300 grams of the Water for at least 30 minutes.
2To prepare the dashi, place the Kombu in the remaining 700 grams of Water in a pot and let it soak for 30 minutes.
3Heat the pot with Kombu and Water over medium heat. Just before it comes to a boil, remove the Kombu.
