1Prepare all vegetables by finely chopping the Onion, Green chili, Curry leaves, and Fresh cilantro. Finely grate the Ginger.
2Heat 15 grams of Ghee in a small tempering pan over medium heat. Add Mustard seeds, Urad dal, and Chana dal. Allow the Mustard seeds to splutter and the dals to turn light golden brown.
3Add the finely chopped Onion, Green chili, grated Ginger, and chopped Curry leaves to the tempering pan. Sauté until the Onion softens and becomes translucent, about 3-4 minutes.
