1Wash White rice thoroughly under cold running water until the water runs clear. Place the White rice in a heatproof bowl suitable for steaming, then add Water for rice.
2Carefully separate the yolk from the white of the Salted duck egg. Set the whole yolk aside. Finely mash the Salted duck egg white.
3Finely mince the Ginger and finely chop the Scallion.
