11. Drain the Firm tofu, press out excess water, then cut into 2cm cubes.
22. Rehydrate Dried shiitake mushrooms in warm water for 30 minutes. Once soft, remove stems and slice the caps. Reserve the Mushroom soaking liquid.
33. Peel and slice Carrot into thin rounds. Core and slice Green bell pepper into strips. Mince Garlic and Fresh ginger. Slice Scallions, separating white and green parts.
