1Soak Glass noodles in warm water for 20-30 minutes until pliable but still firm. Drain thoroughly and cut into shorter segments (about 15 cm) if very long.
2Finely mince Garlic and Ginger. Slice Scallions, separating white and green parts.
3Heat Cooking oil in a wok over medium-high heat until shimmering. Add Sichuan peppercorns and Dried chilies, stir-fry for 30 seconds until fragrant, then remove and discard them.
