Thoroughly clean the rehydrated sea cucumber, remove any internal impurities, then slice it into thin, bite-sized pieces. Place the sliced sea cucumber in a bowl, add Shaoxing wine and a pinch of the measured salt, and gently toss to marinate for 10 minutes.

Rinse the millet under cold running water multiple times until the water runs clear, then drain well.

Peel and thinly slice the fresh ginger. Separate the white and green parts of the scallions. Finely chop the white parts of the scallions and set aside. Finely chop the green parts of the scallions for garnish and set aside separately.
