1Dice the chicken thigh into 1cm cubes. Finely dice the onion and green bell pepper. Thinly slice the scallion for garnish.
2Heat a large frying pan or wok over medium-high heat. Add the vegetable oil and unsalted butter.
3Once the unsalted butter has melted, add the diced chicken thigh to the pan and cook until lightly browned and cooked through, about 3-4 minutes.
