1Thoroughly clean beef tripe under cold running water, scrubbing to remove any impurities. Boil the beef tripe in a pot of water for 30 minutes, then drain and rinse. Slice the beef tripe into thin, bite-sized pieces.
2In a bowl, combine sliced beef tripe with 10g minced garlic, 25g soy sauce, 10g perilla oil, 10g ground perilla seeds, and 2g black pepper. Mix well and set aside to marinate for at least 15 minutes.
3Cook 400g short-grain white rice according to package instructions.
