1Wash the spring onions thoroughly, trimming off the very ends of the roots and any wilted green tips. Ensure the white and light green parts are clean.
2In a bowl, toss the cleaned spring onions with olive oil and salt until evenly coated.
3Place the chiles serranos directly on a hot comal or grill grate. Turn them frequently until they are blistered and slightly softened, about 5-7 minutes. Remove and set aside.
