1Combine the piloncillo and water in a small saucepan and heat gently over low heat until the piloncillo is fully dissolved, creating a piloncillo syrup. Remove from heat and let the piloncillo syrup cool completely.
2In a cocktail shaker, combine the sotol, fresh lime juice, and the cooled piloncillo syrup.
3Add the ice to the shaker and shake vigorously for 15-20 seconds until the mixture is well-chilled.
