1Rinse 200g Glutinous rice and soak in water for at least 4 hours, or preferably overnight. Drain well.
2Soak 30g Dried shiitake mushrooms and 20g Dried shrimp in separate bowls of warm water until softened, about 30 minutes. Reserve the mushroom soaking liquid. Dice the rehydrated Dried shiitake mushrooms and Dried shrimp.
3Dice 150g Bamboo shoots, 100g Chinese sausage, 50g Roasted peanuts, 50g Ginko nuts, and 100g Fresh chestnuts into small, uniform pieces.
