1In a small bowl, dissolve 10 grams of fresh yeast and 5 grams of granulated sugar in 50 grams of lukewarm water (part of the 280g total). Let it sit for 5-10 minutes until foamy.
2In a large mixing bowl or stand mixer, combine 500 grams of "00" flour and 10 grams of fine sea salt.
3Add the activated fresh yeast mixture, 230 grams of remaining lukewarm water, and 20 grams of extra-virgin olive oil to the "00" flour.
