1In a large bowl, combine 300 grams of All-purpose flour and 3 grams of Salt. Gradually add 180 grams of Hot water, mixing with chopsticks until shaggy. Knead the dough for 5-7 minutes until smooth. Cover and let rest for 30 minutes.
2While the dough rests, prepare the oil paste (youmian). In a small bowl, mix 30 grams of All-purpose flour with 40 grams of Sesame oil until a smooth, thick paste forms.
3After the dough has rested, divide it into 4 equal portions. Roll each portion into a ball.
