1Pat the Whole Tilapia thoroughly dry with paper towels. Make several diagonal scores on both sides of the fish, about 1 cm deep.
2Rub the Whole Tilapia all over, inside and out, with 5 grams of Salt, White Pepper, and 30 grams of Shaoxing Wine. Let it marinate for 15 minutes.
3Evenly coat the marinated Whole Tilapia with 50 grams of Cornstarch, ensuring it gets into the scores. Shake off any excess.
