1Prepare all ingredients: Dice potatoes, onion, carrot, and ham into small, uniform 1cm cubes. Mince garlic. Chop green onion, separating the white and green parts.
2Heat 10g of vegetable oil in a large non-stick pan or wok over medium-high heat. Add the diced potatoes and a pinch of salt. Stir-fry the potatoes for 7-10 minutes until they are tender-crisp and lightly browned. Remove the cooked potatoes from the pan and set them aside.
3Add the remaining 10g of vegetable oil to the same pan. Add the diced onion, diced carrot, and diced ham. Stir-fry for 3-4 minutes until the onion is translucent and the ham is lightly browned.
