1Slice the 400g dried tofu into thin strips, approximately 0.5 cm thick and 4-5 cm long.
2Bring a pot of water to a boil. Add the sliced dried tofu and blanch for 2 minutes to remove any raw bean flavor. Drain thoroughly and set aside.
3Prepare the aromatics: Mince the 20g garlic and 15g ginger. Slice the 30g scallions, separating the white parts from the green parts. Remove stems from 10g dried chili peppers and cut them into 1-inch pieces.
