Prepare the Caldin Masala Paste: Soak dry red chilies in warm water for 15 minutes. In a grinder, combine soaked dry red chilies, cumin seeds, coriander seeds, black peppercorns, cloves, cinnamon stick, garlic cloves, fresh ginger, and fresh coconut with a little water. Grind to a very smooth paste. Set aside.

Heat coconut oil in a large pot or kadai over medium heat. Add mustard seeds and let them splutter.

Add curry leaves and sauté for a few seconds until fragrant.
