Thoroughly clean the chicken gizzards, removing any silver skin or tough membranes. Score each gizzard with a few shallow cuts to help with even cooking.

Place the cleaned chicken gizzards in a bowl. Add the sake and grated fresh ginger, tossing to coat. Let marinate for at least 15 minutes.

While the gizzards marinate, prepare the tare sauce. In a small saucepan, combine the koikuchi soy sauce, mirin, and sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce the heat and let it thicken slightly for about 5 minutes. Set aside.
