1Place Beef sirloin and Water in a pot. Bring to a boil, then reduce heat and simmer for 40 minutes, skimming any foam that rises to the surface. This creates a clear beef broth.
2Remove the cooked Beef sirloin from the broth. Once cooled, julienne the Beef sirloin into thin strips. Strain the beef broth through a fine-mesh sieve and set aside.
3Rehydrate Dried shiitake mushrooms in warm water until soft. Squeeze out excess water, remove stems, and julienne the mushroom caps.
