Cut the watermelon into large pieces, remove the rind and any visible seeds. Blend the watermelon flesh in a food processor until smooth.

Pass the blended watermelon through a fine-mesh sieve, pressing firmly to extract all the juice. Discard the pulp. You should aim for approximately 1000g of pure watermelon juice.

In a small saucepan, combine 100g of the strained watermelon juice with the fresh jasmine flowers. Gently heat over low heat for 5 minutes, ensuring it does not boil. Remove from heat and let steep for 15 minutes. Strain the jasmine-infused juice, discarding the fresh jasmine flowers, and set aside.
