1Cut the turkey thigh into approximately 50-gram serving pieces. Season the turkey thigh pieces generously with 10 grams of salt.
2In a large heavy-bottomed pot or Dutch oven, melt the lard over medium-high heat. Sear the turkey thigh pieces in batches until golden brown on all sides. Remove the seared turkey thigh from the pot and set aside.
3Thinly slice 200 grams of white onion for the broth and finely mince the garlic cloves.
