1In a large, heavy-bottomed pot, bring the water and salt to a rolling boil.
2Gradually add the semolina in a slow, steady stream, whisking constantly to prevent lumps from forming.
3Reduce the heat to low and continue to cook, stirring frequently with a wooden spoon, for about 30-40 minutes, until the polenta is very thick and pulls away from the sides of the pot.
